version arrives in a large white bowl.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At the centre is a silky, velvety soup.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On top: thin slices of heirloom tomatoes, wedges of white peach, black grapes, a few young shoots and a generous drizzle of olive oil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It&rsquo;s the kind of dish that immediately catches your eye.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Simple.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Colourful.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Perfectly summery.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then comes the first spoonful.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And suddenly, everything makes sense.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The Elegance of Simplicity<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">We often associate great cooking with complexity.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Technique.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Layers.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sophistication.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And yet, the dishes I remember most are rarely the most complicated ones.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This ajo blanco is a perfect example.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The creamy sweetness of almonds.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The freshness of tomatoes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The delicate perfume of peach.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The roundness of olive oil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nothing feels excessive.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nothing tries too hard.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Every ingredient simply seems to be exactly where it belongs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And perhaps that&rsquo;s what makes this dish so memorable.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Why Honest Greens Works So Well<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Honest Greens perfectly understands the codes of its time.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Open kitchens.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Teams that look like a mix of young chefs and baristas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Large wooden tables.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Plants everywhere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Colourful plates.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Everything reflects a contemporary vision of dining: relaxed, aesthetic and product-driven.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At any given hour, you&rsquo;ll find students, creatives working on laptops, local families and travellers passing through.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The place feels alive.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Energetic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Very Barcelona, in the best possible way.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But unlike many places that rely primarily on image, the food truly delivers on the promise.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The vegetables taste like vegetables.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The juices are genuinely fresh.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The portions are generous.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And the dishes make you want to order them again.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And then again.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The design draws you in.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The food brings you back.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The Address I Always Recommend<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Barcelona is full of more ambitious restaurants.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">More exclusive tables.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">More spectacular dining experiences.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And yet, whenever friends ask me where to have lunch between visits, Honest Greens almost always makes my list.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For the juices.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For the generous plates.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For the way it makes healthy food genuinely desirable.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And for this ajo blanco with heirloom tomatoes and peaches, which I still make at home long after returning.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I walked in for a juice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I still go back for the soup.<\/p>\n\n\n\n<div style=\"background-color:#f7f5f2; padding:24px; border-radius:16px; margin:32px 0; border-left:4px solid #C89B6D;\">\n\n<h4 style=\"margin-top:0; color:#C89B6D;\">\n The Maison Chill Version\n<\/h4>\n\n<h5 style=\"margin-bottom:16px;\">\nAjo Blanco with Heirloom Tomatoes, White Peaches and Black Grapes\n<\/h5>\n\n<p>\nThe secret to a great ajo blanco lies as much in the quality of the almonds as in the quality of the sherry vinegar. Don&rsquo;t compromise on either.\n<\/p>\n\n<p>\n<strong>Serves 4<\/strong>\n<\/p>\n\n<p>\n<strong>For the soup<\/strong><br>\n150 g blanched almonds<br>\n80 g slightly stale country bread, crust removed<br>\n1 small garlic clove<br>\n60 ml extra virgin olive oil<br>\n2 to 3 tablespoons sherry vinegar<br>\n500 ml ice-cold water<br>\nSalt\n<\/p>\n\n<p>\n<strong>For the topping<\/strong><br>\n2 to 3 heirloom tomatoes in different colours<br>\n2 ripe but firm white peaches<br>\n1 small bunch of black grapes<br>\nA few young shoots<br>\nA handful of toasted hazelnuts, roughly chopped<br>\nExtra virgin olive oil<br>\nSea salt flakes<br>\nFreshly ground black pepper\n<\/p>\n\n<p>\nBlend the almonds, bread, garlic, sherry vinegar and ice-cold water until completely smooth. Slowly drizzle in the olive oil while blending. Season with salt and chill for at least two hours.\n<\/p>\n\n<p>\nPour the soup into chilled bowls. Arrange the slices of heirloom tomatoes, peach wedges, halved black grapes, young shoots and toasted hazelnuts on top.
